White Peony 2 Years Aged
White Peony 2 Years Aged
Our White Peony is sun-withering refined—exposing the leaves to gentle sunlight in short intervals. This traditional technique preserves the tea’s natural shape while deepening its floral-honey aroma. With age, the liquor gains sweetness, softness, and a smooth, lasting finish.

Where is it from?
This tea garden is located in Chenxi Township, Shangyu District, Shaoxing, Zhejiang.
At around 500 meters above sea level, it may seem modest — but in this hilly landscape, it’s already considered high terrain. Frequent mist, abundant rainfall, and wide day–night temperature swings nurture tea leaves rich in aroma and internal compounds.
We work with heirloom seed-grown tea bushes (quntizhong), many of which are over 60 years old. Their roots grow over 3 feet deep into mineral-rich soil, allowing the plants to draw natural nutrients and stay resilient through seasonal changes.
This garden has long been my father’s most trusted base — he knows its rhythm and temperament, and can craft entirely different teas from the same fresh leaves simply by adjusting the process.
Aged for Optimal Flavor
After 2 years of careful aging, the tea has shed its youthful sharpness and grassy notes, now offering a clear floral aroma, soft sweetness, and a gentle freshness. It hasn’t yet reached the deeper, woody warmth of old white tea (lao bai cha), but strikes a perfect balance between liveliness and smoothness.
Storage Tips
This tea is also ideal for collectors: with proper storage, high-quality white tea can age gracefully for 10–15 years, developing new layers of aroma and taste over time.
Storage tips for aging:
- Ideal temperature: 20–25 °C
 - Humidity: 50–60% (too high = mold risk; too low = slows aging)
 - Keep away from light, odor, and moisture.

How Sunlight & Time Transform White Tea
Short, repeated sun withering gently dehydrates the leaves—but more than that, it kickstarts subtle chemical transformations.
During processing: B-methylthio-propionaldehyde, responsible for white tea’s signature sun-dried fragrance.
During aging: Linalool (which can smell green or sharp) gradually decreases.
Sweet, floral, and honey-like aroma compounds increase, resulting in a rounder, richer brew.
The result? A pale apricot-gold liquor with smooth texture, lingering floral notes, and a mellow, honeyed finish.

This white tea perfectly matches my expectations, elegant, delicate, and gently sweet. The pale yellow liquor carries soft aromas of peach, apricot, and a hint of melon. Clean and smooth on the palate, it’s light yet layered, without the grassy notes of green tea or the heaviness of black tea. A calming, refined brew I truly enjoy.
A beautifully mellow and well-balanced White Peony. The two years of aging have smoothed out any sharp notes, leaving behind a gentle sweetness and a subtle floral aroma. The liquor is clean and soft, with a lingering honey-like aftertaste. Perfect for quiet afternoons.
