White Peony 2 Years Aged
White Peony 2 Years Aged
Our White Peony is sun-withering refined—exposing the leaves to gentle sunlight in short intervals. This traditional technique preserves the tea’s natural shape while deepening its floral-honey aroma. With age, the liquor gains sweetness, softness, and a smooth, lasting finish.

Aged for Optimal Flavor
After 2 years of careful aging, the tea has shed its youthful sharpness and grassy notes, now offering a clear floral aroma, soft sweetness, and a gentle freshness. It hasn’t yet reached the deeper, woody warmth of old white tea (lao bai cha), but strikes a perfect balance between liveliness and smoothness.

Storage Tips
This tea is also ideal for collectors: with proper storage, high-quality white tea can age gracefully for 10–15 years, developing new layers of aroma and taste over time.
Storage tips for aging:
- Ideal temperature: 20–25 °C
- Humidity: 50–60% (too high = mold risk; too low = slows aging)
- Keep away from light, odor, and moisture.

How Sunlight & Time Transform White Tea
Short, repeated sun withering gently dehydrates the leaves—but more than that, it kickstarts subtle chemical transformations.
During processing: B-methylthio-propionaldehyde, responsible for white tea’s signature sun-dried fragrance.
During aging: Linalool (which can smell green or sharp) gradually decreases.
Sweet, floral, and honey-like aroma compounds increase, resulting in a rounder, richer brew.
The result? A pale apricot-gold liquor with smooth texture, lingering floral notes, and a mellow, honeyed finish.
